TGM Fine Cut Marinated

Ingredients

3 packs

THE GREEN MOUNTAIN Fine CUTs

2

medium-sized red onions

3 tbsp

table vinegar

1 tbsp

sugar

1

small cauliflower

80 ml

olive oil

½ tsp

ground cumin

½ tsp

paprika

½ tsp

chilli powder

2

avocados

1

Juice of 1 lime

200 g

cherry tomatoes

2

fresh green jalapeños

1

bunch of coriander

8

small tortillas

4

lime wedges

salt

pepper, freshly ground

oil for frying

This is how it's done:

1.

Preheat the oven to 200°C (top and bottom heat).

2.

Peel the onions, slice into thin rings and place in a bowl.

3.

Bring the vinegar, 3 tbsp of water and the sugar to the boil, then pour over the onion rings. Set the bowl aside and leave the onion rings to marinate until needed.

4.

Remove the stalk and break the cauliflower into small florets in a bowl. Mix the olive oil and spices together well and pour over the cauliflower florets. Make sure the cauliflower is evenly coated. Line a baking tray with baking paper and arrange the marinated cauliflower on it. Place in the oven and cook for about 20 minutes.

5.

In the meantime, remove the stone and skin from the avocado. Place the flesh in a bowl and mash very finely with a fork. Season to taste with the lime juice and a little salt.

6.

Cut the cherry tomatoes in half or into quarters, depending on their size.

7.

Cut the jalapeños into thin rings. Be careful with the seeds – if you don’t like very spicy dishes, remove them.

8.

Pluck the coriander leaves from the sprigs.

9.

Place the FINE CUTs in a frying pan with hot oil and fry for 8 minutes on each side. Season with salt and pepper to taste and cut into thin slices.

10.

Lightly fry the tortillas on both sides in the pan and wrap them in a clean tea towel to keep them warm.

11.

Then spread a little avocado cream on each tortilla. Spread the roasted cauliflower, marinated onions, cherry tomatoes, jalapeños and a little coriander over the tortillas. Place the sliced FINE CUTs on top, fold the tacos and serve with the lime wedges.
