Ingredients

3 packs

THE GREEN MOUNTAIN Fine CUTs

250 g

Arborio rice

4

shallots, peeled

2

cloves of garlic, peeled

800 ml

vegetable stock (it’s best to make a little extra)

1

sprig basil

6 tsp

olive oil

½

Juice of a lemon

1 tbsp

honey

1 tbsp

balsamic vinegar

salt

pepper, freshly ground

Basil and pea sprouts to garnish

oil for frying

This is how it's done:

1.

Cut the shallots in half lengthways and dice them finely.

2.

Chop the garlic cloves very finely.

3.

Heat 3 tbsp of olive oil in a saucepan and briefly fry the rice. Add the diced shallots and chopped garlic and fry until translucent. Pour in half the vegetable stock and bring to the boil, stirring constantly. Simmer over a medium heat, stirring occasionally, and keep adding a little vegetable stock until the rice is soft but still has a slight bite to it. The risotto shouldn’t be too dry or too runny; add a little more vegetable stock if necessary.

4.

In the meantime, pluck the basil leaves from the sprigs. Place the leaves in a tall container with the remaining olive oil and purée until smooth using a hand blender.

5.

Add the lemon zest and lemon juice to the al dente risotto and stir in.

6.

Add the peas and the toasted pine nuts, then stir in the soya cream to give the risotto a creamy consistency.

7.

Stir in the basil oil at the end, season to taste with a little salt and pepper, then leave the risotto to stand.

8.

Heat a little oil in a frying pan and fry the Fine Cuts for about 8 minutes on each side.

9.

Arrange the risotto on plates. Cut the Fine Cuts in half and arrange 3 halves on top of each portion of risotto.

10.

Garnish with a little basil and some pea sprouts before serving.
