THE GREEN MOUNTAIN-Plant-Based Burger Patties
200 g
Potatoes (floury)
A little
Milk
A little
Butter
A little
Nutmeg
A little
Balsamic roast sauce

Mini carrots

Baby asparagus
1/4
Romanesco

This is how it’s done:
1.
Peel the potatoes and cut into cubes.
2.
Boil the potato cubes in salted water until soft and mix with the milk, butter and nutmeg to make a mashed potato.
3.
Prepare the vegetables, cut, season and steam until crisp.
4.
Sauté the steak over 3/4 heat on both sides until golden brown.
5.
Arrange the mashed potatoes on the plate, add the vegetables and garnish with cress.
6.
Carve the steak and arrange on the plate with the balsamic roast sauce.
