THE GREEN MOUNTAIN-Paprika Chunks
800 g
bulgur
200 g
pesto a la Genovese
120 g
spring onion
120 g
avocado cubes
120 g
edamame
120 g
cucumber
100 g
green asparagus
80 ml
olive oil
80 g
white cabbage
30 ml
lemon juice
15 g
parsley leaves
10 g
chives
15 g
mint
A little
sugar
A little
harissa spice
A little
salt and pepper
How to make the vegan bowl:
1.
Cut the avocado and cucumber into cubes. Cut the spring onions into small rings and marinate separately with the edamame and asparagus in a little lemon juice, olive oil and sea salt. Set aside.

Prepare the bulgur according to the packet instructions. Then mix the bulgur with the parsley leaves and chives, flavouring with olive oil and lemon juice. Season with salt, pepper and sugar.
3.
Fry the paprika chunks in a pan and season to taste with a little harissa.
4.
Finally, arrange everything in a bowl and top with the pesto.
