
Paprika chunks with grilled vegetables and rice

Ingredients

THE GREEN MOUNTAIN-plant-based Paprika Chunks
240 g
rice
2
small courgettes
2
pointed peppers
4
spring onions
1
small eggplant
1
onion
80 ml
olive oil
30 ml
lemon juice
15 g
parsley leaves
10 g
chives
15 g
mint
A little
paprika powder
A little
Salt and pepper
This is how it’s done:
1.
Wash the rice well and then simmer gently in approx. 280 ml water over a low heat until there is no water left in the pan.

Finely dice the spring onion and sauté in a pan with a little olive oil over a medium heat for 2 minutes. Cut the vegetables into roughly equal-sized pieces and then add to the spring onions in the pan. Season with salt, pepper and paprika powder.

Turn the heat up a little and fry for 2 to 3 minutes. Add the paprika chunks and continue frying for about 5 more minutes, tossing several times. Add a dash of lemon juice to the pan right at the end.
4.
Serve the rice on a plate or in a bowl. Place the grilled vegetables and paprika chunks on the rice and marinate with the finely chopped herbs.
