
Louisiana loaded fries with plant-based paprika chunks

Ingredients

THE GREEN MOUNTAIN-Paprika Chunks
300 ml
red salsa
60 g
fresh diced tomatoes
800 g
potatoes
1 bunch spring onions
2
avocados
1 tbsp.
lime juice
1 tbsp.
hot water
2 tbsp.
Cajun spice
1 tbsp.
olive oil
1 tsp.
paprika powder
A little
salt
This is how it’s done:
1.
Mix the hot water and oil together well in a large bowl with a little salt. Peel the potatoes, cut into fries approx. 7 mm thick and place in the bowl.

Fry in a hot air fryer for approx. 30 mins. at 200 degrees, turning the potatoes from time to time. Remove the fries and season with salt and paprika powder.
3.
Halve and pit the avocados, then scrape out the flesh with a spoon and mash with a fork. Finally, stir in the lime juice and season with salt to taste.
4.
Fry the paprika chunks in a little olive oil and season with Cajun spice.
5.
Arrange the fries in a long bowl and top with the paprika chunks. Finely slice the spring onions and scatter over the paprika chunks along with the diced tomatoes.
6.
Serve the salsa and guacamole either directly on top of the paprika chunks or separately.
