Whether served in a classic flatbread, wrapped in yufka or tastily tuned in our vegan kebab box – it not only looks like a kebab, it tastes just as good too.

THE GREEN MOUNTAIN-Plant-Based Kebab
200 g
red cabbage
120 g
cucumber
120 g
chickpeas
450 g
quinoa
380 g
falafel
200 g
hummus
150 ml
olive oil
30 g
tahini
30 g
lemon juice
15 g
fresh parsley leaves
15 g
mint
cumin
paprika powder
salt and pepper
This is how it’s done:
1.
Mix the olive oil, cumin, paprika, salt, pepper, tahini, lemon juice, parsley leaves and mint to make a dressing.
2.
Prepare the quinoa according to the packet instructions, then marinate with 2/3 of the dressing. Prepare the falafel according to the packet instructions and set aside.
3.
Slice the red cabbage, dice the cucumber, and marinate separately with the chickpeas using the remaining third of the dressing.
4.
Fry the plant-based kebabs in a pan for a few minutes on each side.
5.
Spread the quinoa out in a bowl as a base. Then add the red cabbage, cucumber, and chickpeas along with the plant-based kebabs.
6.
Add the hummus and a few fresh herbs to your bowl as a finishing touch.
